POSITION SUMMARY:
This position will be responsible for the management of all restaurant operations including: staffing and training of managers and staff, COGS, service, operational procedures and policies, guest relations, sanitation, organization, environment control, cash handling, staff motivation, safety and security. Senior Restaurant Manager must have the ability to effectively interact, communicate and manage unit managers, staff and guests. Senior Restaurant Manager must be a leader in the restaurant and develop management and staff while creating an environment that encourages ownership and accountability. Maintain Disney quality and ethical standards set by the Walt Disney Company.
REPORTING RELATIONSHIPS:
Reports To: Assistant General Manager, Operations
Direct Reports: Restaurant Managers
RESPONSIBILITIES:
Financial/Operations:
· Accountable for restaurant financial responsibilities, including revenue, controllable profit, cost control, inventory, cash handling and labor costs.
· Manage all aspects of restaurant operations: staffing, scheduling, repair and maintenance, cleanliness, organization, service timing, quality of product, etc.
· Provide operational support for merchandise, sports arena and all promotional efforts.
· Maintain safety and sanitation standards
· Oversee daily operations of entire facility on a shift basis
Guest Service:
· Responsible for a quality guest experience
· Responsible to take proactive approach to guest relations, i.e. time spent on floor interacting with guests, table visits, etc.
· Ability to empower staff to deliver the SCORE standard of service
· Ensure the highest level of quality product and service
Human Resources:
· Manages staff training and employee relations
· Assures that staff morale is maintained at a high level
· Responsible for the development of restaurant managers and staff
· Responsible to provide direct and honest feedback to staff regarding individual performance
· Takes an active part in the recruitment and retention of staff
REQUIRED QUALIFICATIONS:
· Five years of senior management in a high volume environment
· Proven leadership and team skills; ability to motivate and manage all levels of staff and management
· Developed culinary and full-service restaurant background
· Strong P&L Management, forecasting and budgeting
· Strong written and verbal skills
· Organizational skills
DESIRED QUALIFICATIONS:
· Interest and/or knowledge of sports and ESPN
· Interest in cross-training in sports arena and merchandise operations
